Anzac Cookies

These delicious chewy Anzac cookies take about 10 mins to prepare and 10 mins to cook.

Ingredients

  • 1 cup plain flour
  • 1 cup rolled oats
  • 2/3 cup brown sugar
  • 1 cup desiccated coconut
  • 125 g butter chopped
  • 3 tablespoons honey
  • 1/2 teaspons bicarb soda

Method

  • Preheat oven to 160°C/140°C fan-forced
  • Prepare 2-3 baking trays with baking paper
  • Combine the flour, oats, sugar and coconut in a bowl
  • Place butter, syrup and 2 tablespoons cold water in a saucepan over medium heat stirring slowly for 2 minutes or until the butter has melted
  • Stir bicarb soda into the butter mixture
  • Combine the butter mixture with the oat mixture to form the cookie dough and roll into balls about 1 inch in diameter
  • Place on trays, 5cm apart and flatten to your liking
  • Bake for 10 to 12 minutes or until golden
  • Leave on the baking trays for 5 minutes to harden and then transfer to a wire rack to cool
