These delicious chewy Anzac cookies take about 10 mins to prepare and 10 mins to cook.
Ingredients
- 1 cup plain flour
- 1 cup rolled oats
- 2/3 cup brown sugar
- 1 cup desiccated coconut
- 125 g butter chopped
- 3 tablespoons honey
- 1/2 teaspons bicarb soda
Method
- Preheat oven to 160°C/140°C fan-forced
- Prepare 2-3 baking trays with baking paper
- Combine the flour, oats, sugar and coconut in a bowl
- Place butter, syrup and 2 tablespoons cold water in a saucepan over medium heat stirring slowly for 2 minutes or until the butter has melted
- Stir bicarb soda into the butter mixture
- Combine the butter mixture with the oat mixture to form the cookie dough and roll into balls about 1 inch in diameter
- Place on trays, 5cm apart and flatten to your liking
- Bake for 10 to 12 minutes or until golden
- Leave on the baking trays for 5 minutes to harden and then transfer to a wire rack to cool
